Description

Hearty and cheesy Mississippi Mud Potatoes are the ultimate comfort food side dish. Loaded with crispy bacon, sour cream, and cheddar cheese, this easy potato bake is perfect for potlucks, BBQs, or family dinners. Discover how to make this Southern favorite with simple ingredients and rich flavor.

Ingredients

6 large russet potatoes

8 slices bacon

2 cups shredded cheddar cheese

1 cup sour cream

1/2 cup mayonnaise

1/2 teaspoon salt

1/2 teaspoon black pepper

3 green onions

Instructions

1. Preheat the oven to 375°F and grease a large baking dish.

2. Peel and cube the russet potatoes into small even-sized pieces.

3. In a skillet, cook the bacon until crispy. Drain on paper towels and crumble once cooled.

4. In a large mixing bowl, combine sour cream, mayonnaise, salt, and pepper.

5. Add the cubed potatoes and stir to coat them well in the mixture.

6. Transfer the potato mixture to the prepared baking dish and spread evenly.

7. Bake uncovered for 45 minutes, or until potatoes are fork-tender and starting to brown.

8. Remove from oven, sprinkle the top with shredded cheddar cheese and crumbled bacon.

9. Return to oven and bake an additional 10 minutes until cheese is melted and bubbly.

10. Garnish with chopped green onions and serve hot.

Notes

Use russet potatoes for the best texture and crisp edges.

Don’t skip the mayonnaise—it helps bind everything and adds creaminess.

Let the dish rest 5 minutes before serving so the flavors settle and it’s easier to scoop.
