Ingredients
4 cod fillets
3 tablespoons white miso paste
2 tablespoons mirin
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
2 cloves garlic, minced
1 teaspoon fresh grated ginger
Instructions
1. In a small bowl, whisk together miso paste, mirin, soy sauce, rice vinegar, brown sugar, sesame oil, garlic, and ginger until smooth.
2. Pat cod fillets dry and place in a shallow dish. Pour the miso glaze over the fillets and coat well.
3. Marinate the cod in the fridge for at least 15 minutes or up to 1 hour.
4. Preheat oven to broil and line a baking sheet with foil. Lightly oil the foil.
5. Place cod fillets on the sheet, skin-side down. Broil for 6–8 minutes until fish flakes easily and glaze caramelizes.
6. Serve hot with optional garnishes like sliced green onions or sesame seeds.
Notes
Marinate longer for deeper flavor.
Use white miso for a milder, sweeter glaze.
