Description

This Mint Chocolate Mousse Cake is the ultimate dessert for chocolate and mint lovers. With a fluffy chocolate cake base and a silky mint-infused chocolate mousse topping, it’s perfect for holidays, birthdays, or anytime indulgence. A make-ahead treat that looks stunning and tastes even better.


Ingredients

1 cup all-purpose flour

1/2 cup Dutch-processed cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter (softened)

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/4 cups heavy cream (chilled)

8 ounces dark chocolate (60-70% cocoa)

1 teaspoon peppermint extract

2 tablespoons granulated sugar (for mousse)

2 egg yolks

1 teaspoon gelatin (optional, bloomed and melted)


Instructions

1. Preheat oven to 350°F and grease a round cake pan. Line the bottom with parchment paper.

2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.

3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla extract.

4. Gradually mix in the dry ingredients until just combined.

5. Pour the batter into the pan and bake for 20 minutes or until a toothpick comes out clean. Let cool completely.

6. Melt dark chocolate gently over a double boiler and let cool slightly.

7. In another bowl, whip heavy cream to soft peaks and refrigerate.

8. Over a double boiler, whisk egg yolks with sugar until thickened and pale. Add peppermint extract.

9. Fold the melted chocolate into the egg yolk mixture. Then gently fold in the whipped cream.

10. (Optional) Stir in melted gelatin for added mousse stability.

11. Place the cooled cake base into a springform pan. Pour mousse over the cake and smooth the top.

12. Refrigerate for at least 4 hours or overnight until fully set.

13. Unmold the cake and garnish with chocolate shavings, mint leaves, or ganache before serving.

Notes

This dessert is best served chilled.

Use high-quality chocolate for the most decadent flavor.

The gelatin is optional but helps the mousse hold better for slicing.
