Ingredients
1 lb chicken breasts
1 tsp smoked paprika
1 tsp garlic powder
0.5 tsp salt
0.5 tsp black pepper
1 tbsp olive oil
0.5 cup diced onion
1 small jalapeño, diced
0.75 cup heavy cream
0.5 cup shredded Monterey Jack cheese
0.5 cup shredded cheddar cheese
2 oz cream cheese
2 tbsp chopped cilantro
Instructions
1. Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Cook the chicken until golden brown and cooked through. Set aside.
3. In the same skillet, sauté diced onion and jalapeño until softened.
4. Pour in heavy cream and bring to a gentle simmer.
5. Reduce heat and stir in Monterey Jack, cheddar, and cream cheese until smooth and melted.
6. Return chicken to the pan and spoon sauce over each piece. Simmer for 1–2 minutes.
7. Garnish with chopped cilantro and serve hot.
Notes
Let the cheese melt on low heat to avoid clumping.
Add a splash of cream when reheating leftovers to loosen the sauce.
Use pre-shredded cheese for convenience, but freshly shredded melts better.
