Ingredients
1 cup peanut butter
1/2 cup unsalted butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
24 large marshmallows
Candy eyes
Orange sprinkles
Mini M&Ms
Black decorating gel
Instructions
1. Cream the peanut butter, unsalted butter, brown sugar, and granulated sugar until light and fluffy.
2. Add the egg and vanilla extract. Mix until fully combined.
3. Stir in the all-purpose flour, baking soda, and salt until a soft dough forms.
4. Scoop dough into balls and place them on a parchment-lined baking sheet.
5. Bake at 350°F for 8 to 10 minutes until edges are just golden. Let cool completely.
6. Slightly flatten marshmallows and microwave for 5-8 seconds until soft but not collapsed.
7. Place marshmallows on cooled cookies to form the snowman heads.
8. Decorate with candy eyes, mini M&Ms, orange sprinkles, and black gel for arms and smiles.
9. Allow decorations to set before serving or storing.
Notes
These cookies are best decorated once completely cooled.
For a more uniform look, use a cookie scoop for even dough portions.
If freezing cookies, do so before decorating and add snowman faces after thawing.
