Ingredients
1 lb ground beef
1 lb ground pork
1 cup breadcrumbs
3/4 cup milk
1 large egg
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
1 tsp Italian seasoning
1/4 cup chopped fresh parsley
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
3 cups marinara sauce
Instructions
1. Combine the breadcrumbs and milk in a large bowl and let sit until soft and paste-like.
2. Add ground beef, ground pork, egg, Parmesan, garlic, parsley, Italian seasoning, salt, and pepper to the breadcrumb mixture. Mix just until combined.
3. Roll the mixture into 1.5-inch balls, being careful not to pack too tightly.
4. Heat olive oil in a large skillet over medium heat and sear meatballs in batches until browned on all sides, about 6–8 minutes.
5. Add marinara sauce to the skillet or a saucepan and gently place meatballs in the sauce. Cover and simmer for 20–30 minutes until fully cooked and tender.
Notes
These freeze beautifully – cool completely and freeze with sauce for up to 3 months.
Avoid overmixing the meat to keep them light and tender.
You can use a cookie scoop for evenly sized meatballs every time.
