Description

A quick and flavorful Mediterranean Ground Beef Stir-Fry made with lean beef, vibrant vegetables, and bold spices. Perfect for weeknight dinners or meal prep. This Mediterranean skillet meal is healthy, high-protein, and endlessly versatile.


Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small red onion, diced

3 garlic cloves, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup cherry tomatoes, halved

1/2 cup kalamata olives, sliced

2 cups baby spinach

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

1/2 cup crumbled feta cheese


Instructions

1. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed and move beef to one side of the skillet.

2. In the same skillet, drizzle in olive oil and add diced red onion and garlic. Sauté for 2–3 minutes until fragrant.

3. Add bell peppers and cherry tomatoes. Cook for 5–7 minutes until tender. Stir in olives and spinach and cook until spinach wilts.

4. Season with cumin, oregano, salt, and pepper. Stir everything together and cook for 1–2 more minutes.

5. Squeeze fresh lemon juice over the mixture and toss gently.

6. Turn off heat, top with crumbled feta, and serve warm with rice, couscous, or pita.

Notes

Use lean beef for the best texture and flavor balance.

Add red pepper flakes if you want a spicy kick.
