Description

This Mediterranean Cottage Cheese Pasta Salad is a fresh and protein-packed dish perfect for warm days. Made with cottage cheese, pasta, olives, and crisp veggies, it’s a healthy and creamy salad bursting with Mediterranean flavor. Ideal for picnics, potlucks, and easy lunches.


Ingredients

1 ½ cups pasta, uncooked

1 cup cottage cheese

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup kalamata olives, sliced

¼ cup red onion, finely chopped

¼ cup sun-dried tomatoes, chopped

2 tablespoons fresh parsley, chopped

2 tablespoons lemon juice

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and rinse under cold water to stop the cooking.

2. While the pasta cooks, prep the vegetables by chopping the cherry tomatoes, cucumber, olives, sun-dried tomatoes, red onion, and parsley.

3. In a large bowl, mix the cottage cheese with lemon juice, olive oil, salt, and pepper until smooth.

4. Add the cooled pasta and chopped vegetables into the bowl with the dressing and mix everything until well coated.

5. Chill the salad in the fridge for at least 30 minutes before serving. Stir and adjust seasoning if needed.

Notes

This salad is best enjoyed cold or at room temperature.

You can substitute the pasta with a gluten-free version.

Add grilled chicken or shrimp to turn it into a full meal.
