Description

Ingredients

2 cups carrots, shredded or julienned

2 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

1 clove garlic, minced

1⁄4 teaspoon salt

1⁄4 teaspoon black pepper

1⁄3 cup feta cheese, crumbled

2 tablespoons fresh parsley or mint, chopped

1⁄4 cup Kalamata olives, sliced


Instructions
