Description

Mashed Potato Cheese Puffs are crispy, cheesy bites perfect for snacking or appetizers. Made with leftover mashed potatoes, cheese, and green onions, this easy recipe is oven-baked or fried to golden perfection. A comfort food favorite you can customize with herbs, bacon, or spicy cheese.


Ingredients

1 ½ cups mashed potatoes

2 eggs

1 cup shredded cheddar cheese

¼ cup all-purpose flour

2 green onions, chopped

½ teaspoon salt

¼ teaspoon black pepper

1 cup breadcrumbs


Instructions

1. In a large bowl, mix mashed potatoes, eggs, cheese, flour, green onions, salt, and pepper until combined.

2. Scoop tablespoon-sized portions and shape them into balls.

3. Roll each ball in breadcrumbs to coat evenly.

4. To bake: place on a parchment-lined tray and bake at 400°F for 18-20 minutes until golden.

5. To fry: heat oil in a skillet and fry each puff until crisp and browned. Drain on paper towels.

6. Serve warm with dipping sauces or enjoy on their own.

Notes

Use cold mashed potatoes so the mixture holds shape.

You can swap in mozzarella or pepper jack cheese.
