Ingredients
3 cups mashed potatoes
1 1/2 cups shredded cheddar cheese
1/2 cup grated parmesan cheese
2 large eggs
1/2 cup all purpose flour
2 tablespoons unsalted butter melted
1 teaspoon garlic powder
2 tablespoons chopped fresh parsley
1/2 teaspoon fine salt
1/2 teaspoon black pepper
Instructions
1. Preheat and prepare pans. Heat oven to 400F (200C). Line two baking sheets with parchment and lightly mist with cooking spray.
2. Mix the base. In a large bowl combine mashed potatoes, cheddar, parmesan, eggs, garlic powder, parsley, salt, and pepper until evenly blended.
3. Adjust texture. Sprinkle in the flour and fold just until a thick, scoopable dough forms that holds a soft mound.
4. Scoop portions. Using a small cookie scoop or two spoons, portion 1 heaping tablespoon of mixture per puff onto the sheets, spacing about 2 inches apart.
5. Brush for color. Lightly brush tops with the melted butter to encourage browning and extra crisp edges.
6. Bake to golden. Bake 20 to 25 minutes, rotating pans once, until puffed and deeply golden on the bottoms.
7. Rest briefly. Let the puffs stand 3 minutes to set the cheese and firm the edges.
8. Serve warm. Transfer to a platter and sprinkle a little extra parsley. Enjoy while hot and gooey.
9. Reheat like-new. To re-crisp leftovers, warm in a 375F (190C) oven or air fryer for 5 to 7 minutes.

Notes
Use stiffer mashed potatoes. If yours are very creamy, add 1 to 2 extra tablespoons of flour to help them hold shape.
