Description

This mashed potato casserole recipe is a comforting side dish made with creamy Yukon Gold potatoes, sour cream, cheddar cheese, and a crunchy topping. Perfect for holidays, potlucks, or cozy dinners. It’s an easy make-ahead dish that’s always a crowd favorite.


Ingredients

6 Yukon Gold potatoes

4 tablespoons butter

1 cup sour cream

4 ounces cream cheese

1/2 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

1/4 cup chopped green onions

1/2 cup breadcrumbs or crushed crackers


Instructions

1. Peel and chop Yukon Gold potatoes, then boil them in salted water until fork-tender, about 15 minutes.

2. Drain the potatoes and mash with butter, sour cream, cream cheese, and milk until smooth. Add salt and pepper to taste.

3. Preheat oven to 375°F (190°C). Grease a casserole dish.

4. Spread the mashed potato mixture evenly in the dish.

5. Top with cheddar cheese, green onions, and breadcrumbs or crushed crackers.

6. Bake uncovered for 25–30 minutes until golden and bubbling.

7. Let cool slightly before serving. Garnish with additional green onions or parsley if desired.

Notes

Use Yukon Gold potatoes for the best creamy texture.

You can make this a day ahead and refrigerate before baking.

Add cooked bacon or caramelized onions for extra flavor.
