Ingredients
2 tablespoons olive oil
1 pound boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
3 garlic cloves, minced
1/3 cup chopped sun-dried tomatoes
4 cups chicken broth
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 pound potato gnocchi
2 cups baby spinach
1/4 cup chopped fresh basil
Instructions
1. Season chicken breasts with salt and pepper. In a large pot, heat olive oil and sear chicken until cooked through. Remove and dice.
2. In the same pot, sauté garlic and sun-dried tomatoes until fragrant. Stir in Italian seasoning and red pepper flakes.
3. Add chicken broth and bring to a simmer. Return diced chicken to the pot.
4. Pour in heavy cream and Parmesan. Stir until creamy and well combined.
5. Add gnocchi and cook for about 5 minutes until tender.
6. Stir in spinach and basil just before serving.
7. Ladle into bowls and garnish with extra Parmesan and black pepper.
Notes
This soup thickens as it cools; add a splash of broth when reheating.
You can swap spinach for kale or add mushrooms for extra texture.
