Ingredients
1 lb chicken thighs
3 tbsp maple syrup
3 cloves garlic, minced
1 tbsp Cajun seasoning
1 cup heavy cream
1 cup grated Parmesan cheese
8 oz fettuccine or linguine
2 cups Brussels sprouts, halved
2 tbsp olive oil
2 tbsp butter
Salt and pepper to taste
Instructions
1. Preheat oven to 425°F. Trim and halve Brussels sprouts. Toss with olive oil, salt, and pepper. Roast cut-side down on a baking sheet for 20–25 minutes until crispy and caramelized.
2. Bring a large pot of salted water to a boil. Cook pasta until al dente, drain, and reserve 1/2 cup of pasta water.
3. Cut chicken thighs into 1 to 1.5-inch bites. Season with salt, pepper, and a pinch of Cajun seasoning. Sear in olive oil until golden and cooked through.
4. Add garlic and maple syrup to the skillet with the cooked chicken. Simmer until the sauce bubbles and caramelizes.
5. In a separate saucepan, melt butter. Add garlic and Cajun seasoning, then stir in heavy cream. Simmer, then add Parmesan and stir until melted. Thin with pasta water if needed.
6. Toss cooked pasta in the Cajun Alfredo sauce until coated.
7. Plate pasta, top with maple garlic chicken bites, and arrange roasted Brussels around the edges. Drizzle with extra Alfredo if desired.
8. Serve hot and enjoy.
