Description

Creamy Loaded Potato Soup is the ultimate comfort food recipe made with tender russet potatoes, cheddar cheese, crispy bacon, sour cream, and green onions. This rich and hearty soup is perfect for cozy dinners and easy weeknight meals. A classic homemade potato soup loaded with toppings that everyone loves.


Ingredients

4 large russet potatoes

1 medium onion, diced

2 cloves garlic, minced

4 tablespoons butter

1/4 cup all-purpose flour

4 cups chicken broth

2 cups milk

1 cup heavy cream

2 cups shredded cheddar cheese

8 slices bacon, cooked and crumbled

1/2 cup sliced green onions

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sour cream


Instructions

1. Melt butter in a large pot over medium heat and add diced onions. Cook until soft and translucent, about 5 minutes.

2. Stir in minced garlic and cook for 1 minute until fragrant.

3. Sprinkle flour over onions and garlic, stirring constantly to create a roux. Cook for 2 minutes.

4. Slowly whisk in the chicken broth, then add milk and cream. Stir until smooth and slightly thickened.

5. Add diced potatoes and bring to a gentle simmer. Cook for 15-20 minutes until potatoes are fork-tender.

6. Use an immersion blender to blend part of the soup, leaving chunks for texture. You can also use a regular blender for half the batch.

7. Stir in shredded cheddar cheese, sour cream, and crumbled bacon. Mix until melted and well combined.

8. Season with salt and pepper to taste.

9. Serve hot, garnished with extra cheese, bacon, and green onions.

Notes

Use Yukon Gold potatoes for a buttery texture.

Add a splash of milk when reheating leftovers to keep it creamy.

For a smoky flavor, use smoked paprika or smoked bacon.
