Description

This Loaded Potato Meatloaf recipe combines savory ground beef, creamy mashed potatoes, cheddar cheese, crispy bacon, and green onions in one comforting dish. Ingredients

1 ½ pounds ground beef

¾ cup breadcrumbs

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

2 cups mashed potatoes (prepared, fresh or instant)

1 cup shredded cheddar cheese

5 slices bacon (cooked and crumbled)

¼ cup chopped green onions


Instructions

1. Preheat oven to 375°F (190°C).

2. In a large bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined.

3. Shape the meat mixture into a loaf and place in a baking dish or loaf pan.

4. Bake uncovered for 30 minutes.

5. Remove from oven and spread mashed potatoes evenly on top.

6. Sprinkle shredded cheddar cheese over the mashed potatoes.

7. Add crumbled bacon on top of the cheese layer.

8. Return to oven and bake an additional 20 minutes, until cheese is melted and slightly golden.

9. Let rest for 5–10 minutes before slicing.

10. Garnish with chopped green onions and serve warm.
