Description

These Loaded Beef Enchiladas With Cheese Sauce are the ultimate comfort food for weeknight dinners. Made with seasoned ground beef wrapped in soft flour tortillas and drenched in a rich, homemade cheddar cheese sauce, they’re hearty, cheesy, and family-approved. This easy beef enchilada recipe is perfect for meal prep and Tex-Mex lovers alike.


Ingredients

1 lb ground beef

1 small yellow onion, diced

3 garlic cloves, minced

2 tbsp tomato paste

2 tbsp taco seasoning

6 flour tortillas

2 tbsp butter

2 tbsp all-purpose flour

2 cups milk

2 cups shredded cheddar cheese

1 tsp salt

1/2 tsp black pepper


Instructions

1. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and cooked through.

2. Add the garlic, taco seasoning, and tomato paste. Stir well and let it cook for another 2 minutes.

3. In a saucepan, melt the butter and whisk in the flour to make a roux.

4. Slowly pour in the milk, whisking constantly until the mixture begins to thicken.

5. Add the shredded cheddar cheese and stir until the cheese sauce is smooth and creamy. Season with salt and pepper.

6. Preheat your oven to 375°F (190°C).

7. Spoon the beef mixture evenly into each tortilla, roll them up tightly, and place them seam-side down in a greased baking dish.

8. Pour the cheese sauce generously over the top of the enchiladas.

9. Bake uncovered for 20–25 minutes, until the sauce is bubbling and the edges are golden.

10. Let rest for a few minutes before serving.

Notes

These enchiladas taste best fresh out of the oven.

Use pre-shredded cheese for a quicker sauce, or shred your own for better melt.

Warm your tortillas slightly to make rolling easier and avoid cracking.
