Description

A light and fluffy yogurt cake made with Greek yogurt, eggs, and lemon zest. This easy yogurt cake is perfect for a light dessert or a sweet brunch and stays moist for days. A simple, tangy, and tender cake for any occasion.


Ingredients

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

2 large eggs

2/3 cup granulated sugar

1 cup full-fat Greek yogurt

1/3 cup vegetable oil

1 teaspoon vanilla extract

1 teaspoon lemon zest (optional)


Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the eggs and sugar until light and slightly thickened.

4. Add yogurt, oil, vanilla extract, and lemon zest (if using) to the egg mixture. Mix until smooth.

5. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

6. Pour batter into the prepared pan and smooth the top.

7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

9. Dust with powdered sugar or serve with yogurt and fresh berries.

Notes

The cake is best made with full-fat Greek yogurt for richness.

Do not overmix the batter to keep the texture light and tender.
