Description

Ingredients

6 egg whites

120 g cake flour

200 g sugar

1 tsp vanilla extract

1/2 tsp cream of tartar

1/4 tsp salt


Instructions

1. Sift cake flour and half of the sugar into a bowl to remove lumps and combine.

2. In a clean bowl, beat egg whites and cream of tartar on medium-high speed until foamy.

3. Gradually add the remaining sugar while beating until stiff peaks form.

4. Gently fold the flour mixture into the whipped egg whites in batches, taking care not to deflate.

5. Fold in vanilla extract just until incorporated.

6. Pour batter into an ungreased tube pan, smooth the top.

7. Bake at 325°F (160°C) for 40–45 minutes until golden and a toothpick comes out clean.

8. Invert pan and let cool completely upside down to maintain height.

9. Once cooled, run a knife around edges to release and serve.

The cake is best served the day it is baked for maximum fluffiness.
