Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
8 cups low-sodium chicken broth
2 cups cooked shredded chicken
3/4 cup orzo pasta
1/4 cup fresh lemon juice
2 tablespoons chopped fresh dill or parsley
Salt, to taste
Black pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion, sliced carrots, and celery. Sauté for 5 to 7 minutes until softened.
3. Stir in minced garlic and cook for 1 more minute.
4. Pour in chicken broth and bring to a boil.
5. Reduce heat to a simmer and cook for 10 minutes.
6. Add orzo pasta and simmer for 8 to 10 minutes until tender.
7. Stir in shredded cooked chicken and heat through.
8. Remove from heat, add lemon juice and chopped herbs.
9. Season with salt and pepper to taste.
10. Serve hot with extra lemon or herbs if desired.
