Ingredients
2 chicken breasts
1 tablespoon lemon zest
1 teaspoon cracked black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 tablespoon olive oil
1 teaspoon salt
8 ounces pasta twists (fusilli or rotini)
1 cup heavy cream
½ cup grated Parmesan cheese
2 tablespoons cream cheese
1 tablespoon Cajun seasoning
½ cup roasted red peppers, chopped
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
Instructions
1. Dice the chicken breast into bite-sized pieces and toss them with olive oil, lemon zest, cracked black pepper, garlic powder, paprika, and salt. Let sit for 10 minutes.
2. Cook chicken in a hot skillet or air fryer at 400°F for 8-10 minutes until golden brown and crispy.
3. Boil pasta twists in salted water until al dente, then drain and reserve a bit of the pasta water.
4. In a saucepan, melt butter and sauté garlic. Stir in heavy cream, cream cheese, and Cajun seasoning. Whisk until smooth.
5. Fold in roasted red peppers and Parmesan cheese. Simmer until thickened. Add reserved pasta water if needed.
6. Toss cooked pasta with the sauce.
7. Serve in bowls topped with crispy chicken bites and garnish with parsley and extra Parmesan if desired.
Notes
Use pre-cooked chicken and jarred sauce for a shortcut.
Add more Cajun seasoning if you prefer spicier flavor.
