Description

Lemon Garlic Shrimp Orzo is a quick and flavorful seafood dinner made with tender orzo pasta, juicy shrimp, garlic butter, and fresh lemon zest. This easy Mediterranean-inspired recipe is perfect for busy weeknights and healthy meal prep.


Ingredients

1 lb shrimp, peeled and deveined

1 cup orzo pasta

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 lemon, juiced and zested

2 cups chicken broth (or vegetable broth)

2 tablespoons fresh parsley, chopped

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

1. Heat olive oil and butter in a large skillet over medium heat.

2. Add shrimp, season with salt and pepper, and sauté for 2–3 minutes per side until pink and cooked through. Remove and set aside.

3. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.

4. Stir in orzo and toast for 1 minute to enhance the flavor.

5. Pour in broth and bring to a gentle simmer. Cook, stirring occasionally, for about 8–10 minutes until orzo is tender and most of the liquid is absorbed.

6. Add lemon juice and zest, return shrimp to the pan, and stir everything together. Cook for another 1–2 minutes until heated through.

7. Sprinkle with fresh parsley, taste, and adjust seasoning as needed.

8. Serve warm and enjoy.

Notes

This dish reheats beautifully with a splash of broth to loosen the orzo.

Use wild-caught shrimp for the best flavor.

Feel free to add crushed red pepper flakes for a spicy kick.
