Ingredients
1 lb chicken breast or thighs
3 garlic cloves, minced
1 lemon, juiced and zested
3 tbsp butter
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
¾ cup grated parmesan cheese
8 oz linguine pasta
2 tbsp chopped parsley
½ cup reserved pasta water (as needed)
Instructions
1. Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Reserve ½ cup pasta water, drain, and set aside.
2. Cut chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.
3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken in a single layer until golden brown and cooked through. Remove and set aside.
4. Reduce heat to medium and add butter to the same skillet. Stir in minced garlic and cook until fragrant. Add lemon juice and zest, and simmer for 1 minute.
5. Return chicken to skillet and toss to coat in sauce. Add cooked linguine and a splash of reserved pasta water.
6. Stir in parmesan cheese and mix until the pasta is glossy and well-coated.
7. Garnish with fresh parsley and extra parmesan. Serve hot and enjoy.
