Ingredients
2 cups graham cracker crumbs
1/2 cup melted butter
24 oz full-fat cream cheese, softened
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
3/4 cup sour cream
1/2 cup heavy whipping cream
2 cups fresh strawberries
1/3 cup strawberry jam
1 tablespoon lemon juice
Instructions
1. Preheat the oven to 325°F. Pulse graham crackers in a food processor to fine crumbs. Mix with melted butter until texture resembles wet sand.
2. Press mixture into a springform pan evenly. Bake crust for 10 minutes and let cool.
3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each.
4. Add vanilla, sour cream, and heavy cream. Beat until the filling is smooth and silky.
5. Pour filling over crust. Wrap pan in foil and place in a water bath. Bake for 60–70 minutes, until center is just set.
6. Turn off oven and let cheesecake sit inside for an hour with door cracked open. Refrigerate for at least 4 hours or overnight.
7. Arrange strawberries on top. Heat jam and lemon juice, brush over strawberries to glaze.
