Description

These juicy Keto Italian Meatballs with Marinara Sauce are packed with flavor and low in carbs. Made with almond flour, Parmesan, and ground beef, they’re simmered in sugar-free marinara for a comforting, gluten-free keto dinner perfect for meal prep or family meals.


Ingredients

1 lb ground beef

1/4 cup almond flour

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

2 cups sugar-free marinara sauce


Instructions

1. In a large bowl, combine ground beef, almond flour, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.

2. Shape the mixture into 1.5-inch meatballs, yielding 16 to 18 meatballs.

3. Heat olive oil in a skillet over medium heat. Sear meatballs in batches until browned on all sides, about 6–8 minutes. Remove and set aside.

4. Pour marinara sauce into the skillet and bring to a simmer. Add meatballs, cover, and cook on low for 20 minutes or until fully cooked.

5. Serve hot, garnished with Parmesan and basil if desired.

Notes

Use 80/20 ground beef for best moisture and flavor.

Do not overmix the meatball mixture to keep them tender.

Freeze cooked meatballs for easy meal prep.
