Description
These juicy caramelized tomatoes are the ultimate savory topping for everything from grilled meats to pasta and toast. This easy recipe uses cherry tomatoes, garlic, olive oil, and a touch of sugar to create a sweet and savory jam-like condiment. Ideal for weeknight meals or weekend brunch, it’s naturally gluten-free and vegan, and adds deep umami to any dish.
Ingredients
2 cups cherry or grape tomatoes
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon fresh thyme or basil (optional)
1 teaspoon balsamic vinegar (optional)
Instructions
1. Heat a wide skillet over medium heat and add the olive oil until it shimmers.
2. Add the tomatoes, whole or halved depending on size. Let them sit undisturbed for 2 to 3 minutes until they begin to brown.
3. Stir in the garlic, salt, and sugar. Stir gently to combine, then let sit again to allow the tomatoes to caramelize.
4. As tomatoes begin to collapse and the liquid thickens, stir in herbs and optional balsamic vinegar.
5. Remove from heat and serve immediately or let cool and refrigerate in a sealed jar for up to 5 days.
Notes
Let tomatoes sit in the pan without stirring to encourage caramelization.
Use a wide skillet to avoid steaming the tomatoes.
Balsamic vinegar is optional but adds a richer depth of flavor.
