Ingredients
1 lb ground chicken
1 small onion, grated
3 cloves garlic, minced
3 tablespoons chopped parsley
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
2. In a large bowl, mix together ground chicken, grated onion, garlic, parsley, cumin, coriander, paprika, salt, pepper, and olive oil until just combined.
3. With damp hands, shape the mixture into meatballs about the size of a golf ball. You should get 18–20.
4. Arrange meatballs on the baking sheet, evenly spaced.
5. Bake for 18–20 minutes, turning once halfway through for even browning.
