Jimmy Carter’s Grandmother’s Peanut Butter Cookies deliver classic crisscross nostalgia with a soft center and lightly crisp edges. This easy peanut butter cookie recipe uses pantry staples, bakes in minutes, and freezes beautifully.


Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup light brown sugar, packed

2 large eggs, room temperature

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon fine salt

2 teaspoons vanilla extract


Instructions

1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.

2. Cream the butter, peanut butter, granulated sugar, and brown sugar with a mixer on medium until light and fluffy, 2 to 3 minutes.

3. Beat in the eggs one at a time until fully incorporated, then mix in the vanilla.

4. In a separate bowl whisk the flour, baking soda, and salt. Add to the wet mixture on low speed just until combined. Do not overmix.

5. Scoop tablespoon portions, roll into balls, set on the sheets, and press each with a fork in a crisscross pattern.

6. Bake 8 to 10 minutes until edges are set and tops look slightly dry.

7. Cool on the sheet 2 minutes, then transfer to a rack to finish cooling.

Notes

Let the butter soften to room temperature so the dough creams properly.

Stir natural peanut butter very well if using, or choose classic shelf-stable for consistent texture.

Chill the dough 20 minutes if your kitchen is warm to help keep the cookies from spreading.
