Ingredients
2 ripe pears
1 cup all-purpose flour
3/4 cup granulated sugar
2 large eggs
1/2 cup unsalted butter
1/4 cup milk
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1 teaspoon lemon zest
Powdered sugar for dusting (optional)
Instructions
1. Peel, core, and slice the pears thinly and set them aside.
2. In a mixing bowl, cream the butter and sugar until fluffy.
3. Add eggs one at a time, then mix in the vanilla and lemon zest.
4. In a separate bowl, whisk flour and baking powder.
5. Add the dry ingredients to the wet mixture, alternating with milk.
6. Pour batter into a greased and floured springform pan.
7. Arrange pear slices on top or fold some into the batter.
8. Bake at 350°F (175°C) for 45–50 minutes, or until golden and set.
9. Let the cake cool in the pan for 10 minutes, then remove the ring.
10. Dust with powdered sugar if desired and serve.
Notes
Use firm-ripe pears like Bosc or Anjou.
Do not overmix the batter to keep the cake tender.
