Ingredients
1 lb chicken breasts (2 large boneless, skinless)
3 cups fresh spinach
2 cloves garlic, minced
4 oz cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
Instructions
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a skillet and sauté garlic until fragrant.
3. Add spinach and cook until wilted. Remove from heat and let cool slightly.
4. In a bowl, mix spinach, cream cheese, mozzarella, and parmesan.
5. Butterfly the chicken breasts by slicing a pocket lengthwise, being careful not to cut through.
