Ingredients
1 lb steak, cut into bite-sized cubes
1.5 lb baby potatoes, halved
3 tbsp butter
1 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tsp salt
0.5 tsp black pepper
1 tsp Italian seasoning
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Place halved baby potatoes cut-side down and cook until golden and tender, then remove and set aside.
3. Add more oil if needed and place steak pieces in the hot skillet in a single layer.
4. Sear steak without moving for 2–3 minutes, then flip and cook until browned and cooked through. Remove from skillet and keep warm.
5. Lower heat to medium. Add butter and garlic to the skillet and cook for 1 minute until fragrant.
6. Return potatoes and steak to the skillet. Toss everything in the garlic butter until well coated.
7. Sprinkle with parsley, adjust seasoning, and serve immediately.
Notes
This recipe is best served hot and fresh from the skillet.
Use a cast iron skillet for the best sear on both potatoes and steak.
Don’t overcrowd the steak in the pan—work in batches if necessary.
