Description

These Hot Chocolate Cookies are chewy, chocolate-packed winter treats filled with gooey marshmallow centers. A cozy dessert perfect for holidays, made with cocoa powder and chocolate chips. Ideal hot cocoa cookie recipe for gifting or indulging on cold nights.


Ingredients

1 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips or chunks

3/4 cup mini marshmallows


Instructions

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.

4. Add the eggs one at a time, then mix in vanilla extract.

5. Gradually add the dry ingredients to the wet mixture and mix until just combined.

6. Fold in chocolate chips or chunks evenly into the dough.

7. Scoop 1.5 tablespoon portions of dough, flatten slightly, insert mini marshmallows into the center, and shape into balls.

8. Place on baking sheet with space to spread and bake for 9–11 minutes, until edges are set.

9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Always fully enclose the marshmallow inside the dough to prevent leaking.

Let cookies cool slightly before moving so they don’t fall apart.

Microwave for a few seconds before serving to re-melt the marshmallow center.
