Ingredients

1 cup warm water

2 1/4 teaspoons instant yeast

1 teaspoon sugar

2 1/2 cups all-purpose flour

1 teaspoon salt

1 tablespoon olive oil


Instructions

1. In a mixing bowl, combine warm water, sugar, and instant yeast. Let sit for 5 minutes until frothy.

2. Add flour, salt, and olive oil. Mix until a shaggy dough forms.

3. Knead on a floured surface for 8–10 minutes until smooth and elastic.

4. Place dough in an oiled bowl, cover, and let rise for 1 to 1.5 hours until doubled in size.

5. Punch down dough, divide into 8 balls, and roll into flat circles about 1/4 inch thick. Rest for 10 minutes.

6. Preheat oven to 475°F with a baking sheet inside or heat a dry skillet on the stove.

7. Bake or cook pitas for 2–3 minutes until puffed and lightly golden.

8. Serve warm or store as directed.

Notes

Use bread flour for a chewier texture if preferred.

Resting the dough after rolling helps encourage puffing in the oven.

Use a pizza stone for best baking results, but a hot sheet works too.
