Homemade Lasagna Soup is a hearty Italian inspired comfort meal made with ground beef, Italian sausage, tender lasagna noodles, rich tomato broth, and creamy ricotta cheese topping. Ingredients
1 lb ground beef
1/2 lb Italian sausage
1 medium onion chopped
4 cloves garlic minced
1 tbsp olive oil
1 tbsp tomato paste
1 can 28 oz crushed tomatoes
6 cups chicken broth
8 lasagna noodles broken into pieces
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tbsp fresh basil chopped
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add the ground beef and Italian sausage and cook until browned while breaking the meat into small pieces. Drain excess grease if needed.
2. Add the chopped onion to the pot and cook for about 4 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.
3. Stir in the tomato paste and cook for another minute to deepen the flavor.
4. Pour in the crushed tomatoes and chicken broth. Add Italian seasoning, salt, and black pepper. Stir well and bring the soup to a gentle simmer.
5. Break the lasagna noodles into bite sized pieces and add them to the pot. Simmer for 12 to 15 minutes until the pasta is tender. Stir occasionally to prevent sticking.
6. In a small bowl mix ricotta cheese with half of the Parmesan cheese and a little fresh basil.
7. Ladle the soup into bowls and top with the ricotta mixture, shredded mozzarella, remaining Parmesan cheese, and fresh basil. Serve hot.
Notes
This soup thickens slightly as it sits because the pasta absorbs some of the broth. Add a little extra broth when reheating if needed.
You can substitute ground turkey or chicken for a lighter version while still keeping the same comforting flavor.
If you want extra richness, stir a small splash of heavy cream into the soup just before serving.
