Description

Ingredients

1 block feta cheese (about 7 oz)

2 cups cherry tomatoes

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

½ teaspoon red pepper flakes

8 oz pasta of your choice

Salt to taste

Fresh basil leaves for garnish


Instructions

1. Preheat your oven to 400°F (200°C).

2. In a baking dish, place the block of feta cheese in the center.

3. Surround it with cherry tomatoes and drizzle everything with olive oil.

4. Sprinkle in the minced garlic, oregano, and red pepper flakes. Toss the tomatoes gently to coat.

5. Bake in the oven for about 30 minutes, or until the tomatoes have burst and the feta is golden and soft.

6. Meanwhile, cook the pasta according to package directions until al dente. Reserve ½ cup of pasta water before draining.

7. Once the feta and tomatoes are done, use a fork to mash and mix everything into a creamy sauce.

8. Add the cooked pasta to the baking dish and toss to combine. If needed, loosen the sauce with a bit of the reserved pasta water.

9. Season with salt if needed, garnish with fresh basil, and serve immediately.

Notes

Always reserve some pasta water to help bind the sauce.

Use a good quality block of feta, not crumbled, for the creamiest result.

For extra flavor, add sautéed spinach or sun-dried tomatoes after baking.
