Ingredients
1 lb ground beef
3 russet potatoes, peeled and diced
2 Yukon gold potatoes, diced
2 carrots, peeled and chopped
2 celery stalks, chopped
1 yellow onion, diced
3 garlic cloves, minced
6 cups beef broth
2 tbsp tomato paste
1 ½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning
1 bay leaf
Instructions
1. In a large Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
2. Add diced onion, carrots, and celery to the beef. Sauté for 5 minutes until softened. Stir in minced garlic and cook for 1 minute.
3. Stir in tomato paste and mix until combined. Pour in the beef broth.
4. Add russet and Yukon gold potatoes, salt, pepper, Italian seasoning, and bay leaf. Stir well.
5. Bring soup to a boil, then reduce heat to low. Cover and simmer for 25 to 30 minutes until potatoes are fork-tender.
6. Remove bay leaf. Taste and adjust seasoning if needed. Serve hot.
