Ingredients
1 tablespoon olive oil
1 pound chicken thighs (boneless or bone-in)
1 cup white rice
2 carrots, chopped
2 celery stalks, chopped
1 onion, diced
3 garlic cloves, minced
8 cups chicken broth
2 bay leaves
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Cook until softened, about 5-6 minutes. Stir in minced garlic and cook for another 1-2 minutes.
2. Place the chicken thighs into the pot and pour in the chicken broth. Toss in bay leaves and thyme. Bring to a boil, then reduce heat and let it simmer for 20 minutes until the chicken is fully cooked.
3. Remove the chicken from the pot and shred it using two forks. Discard any bones or skin.
4. Return the shredded chicken to the pot and stir in the rice. Continue simmering until the rice is fully cooked, about 15 minutes.
5. Season with salt and pepper to taste. Remove bay leaves before serving. Serve hot.
