This hearty sausage spinach mushroom egg bake is a protein-packed breakfast casserole made with savory sausage, sautéed mushrooms, tender spinach, and fluffy eggs. A healthy and easy low-carb brunch or meal prep option full of flavor and comfort.
Ingredients
12 eggs
1 cup cooked sausage, crumbled
2 cups fresh spinach, chopped
1 cup mushrooms, sliced
1 small onion, diced
2 cloves garlic, minced
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheese (cheddar, mozzarella, or a mix)
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a skillet over medium heat, sauté the diced onion until translucent.
3. Add mushrooms and cook until browned and moisture evaporates.
4. Stir in garlic and sausage, cook for another minute.
5. Add chopped spinach and cook until just wilted. Remove from heat.
6. In a large bowl, whisk together eggs, milk, salt, and pepper.
7. Stir in half the shredded cheese.
8. Add the sautéed mixture into the eggs and stir to combine.
9. Pour everything into the prepared baking dish and top with the rest of the cheese.
10. Bake for 30–35 minutes until the top is golden and center is set.
11. Let cool slightly before slicing and serving.
Notes
Use pre-cooked sausage to save time.
Swap spinach for kale or Swiss chard if preferred.
