Ingredients
1 lb Italian sausage
1 medium yellow onion, diced
3 cloves garlic, minced
2 medium carrots, diced
2 stalks celery, diced
1 can (28 oz) crushed tomatoes
4 cups chicken broth
9 oz refrigerated cheese tortellini
1 tsp Italian seasoning
2 cups fresh spinach
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
2. Add onion, carrots, and celery to the pot. Cook for 5–7 minutes until softened. Add garlic and cook for 30 seconds.
3. Return sausage to the pot. Stir in crushed tomatoes and chicken broth. Add Italian seasoning, salt, and pepper. Simmer for 15 minutes.
4. Add tortellini and cook according to package directions, usually 5–7 minutes.
5. Stir in spinach and cook until wilted, about 1–2 minutes.
6. Taste and adjust seasoning as needed before serving.
Notes
You can use frozen tortellini but add a few extra minutes of cook time.
Feel free to swap spinach for kale or omit for a meatier version.
For a creamier soup, add a splash of heavy cream at the end.
