Ingredients
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 teaspoons Cajun seasoning
1 can green chilies (4 oz)
2 cups cooked chicken, shredded
2 cans white beans, drained (15 oz each)
2 cups chicken broth
4 oz cream cheese
½ cup sour cream
1 tablespoon lime juice
1 cup corn (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onions and garlic and cook until soft and fragrant.
2. Stir in Cajun seasoning and green chilies. Cook for 1 to 2 minutes to release flavor.
3. Add shredded chicken, drained white beans, and chicken broth. Bring to a simmer and let cook for 15 to 20 minutes.
4. Reduce heat to low and stir in cream cheese until fully melted.
5. Stir in sour cream and lime juice. Simmer gently for 5 more minutes.
6. Taste and adjust seasoning. Serve hot with your favorite toppings like cilantro or shredded cheese.
Notes
This chili can be made milder by reducing the Cajun seasoning.
It thickens as it sits—add extra broth when reheating.
