Ingredients

1 pound beef strips

2 medium zucchinis

3 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon sesame oil

1 teaspoon cornstarch

1 teaspoon honey

2 green onions (optional)

1 tablespoon neutral oil (for cooking)


Instructions

1. Slice the beef thinly against the grain and cut the zucchini into half-moons or matchsticks. Mince garlic and ginger.

2. In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, garlic, and ginger.

3. Heat oil in a large skillet or wok over medium-high heat. Sear beef in a single layer until browned and cooked through. Remove from pan.

4. In the same pan, add a bit more oil if needed. Add zucchini and stir-fry until just tender but still crisp.

5. Return the beef to the pan and pour in the prepared sauce. Stir everything together and let it simmer for 1–2 minutes until the sauce thickens.

6. Serve hot over rice, cauliflower rice, or noodles. Garnish with chopped green onions if desired.

Notes

This recipe can easily be doubled for meal prep.

For a spicier version, add chili flakes or sriracha to the sauce.

Always slice beef against the grain for tender bites.
