Description

Ingredients

1 tablespoon olive oil

1 pound ground turkey

1 medium onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

1 teaspoon dried thyme

1 bay leaf

6 cups low-sodium chicken broth

1 cup white rice (uncooked)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and celery. Cook for about 5 minutes until softened.

2. Add the ground turkey and cook, breaking it apart with a spoon, until browned—about 6 to 8 minutes.

3. Stir in the minced garlic and dried thyme, cooking for 1 more minute until fragrant.

4. Pour in the chicken broth and add the bay leaf. Bring to a gentle boil.

5. Stir in the rice and reduce heat to a simmer. Let cook uncovered for 20 to 25 minutes, stirring occasionally.

6. Remove the bay leaf, season with salt and pepper to taste, and stir in the chopped parsley before serving.

Notes

This soup thickens as it sits—add a splash of broth or water when reheating.

Use any rice you like, but adjust cooking time based on the type.

Feel free to add spinach or zucchini for more veggies.
