Description

Ingredients

1 lb ground beef

2 medium sweet potatoes, peeled and diced

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp ground cumin

1 tsp salt

1/2 tsp black pepper

2 tbsp fresh parsley, chopped (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until softened and edges begin to brown.

2. Push sweet potatoes to the side and add more oil if needed. Add onion, garlic, and bell pepper. Cook for 4 minutes until softened.

3. Add ground beef to the skillet. Break it apart with a spatula and cook until no longer pink, then mix with the veggies.

4. Season with smoked paprika, cumin, salt, and black pepper. Stir everything well and cook for another 2 to 3 minutes to blend the flavors.

5. Optional: Garnish with chopped fresh parsley before serving.

Notes

This recipe is naturally gluten-free.

You can substitute ground turkey or chicken for a leaner version.
