Ingredients
8 chicken thighs
3 fresh lemongrass stalks (tender part only, chopped)
4 garlic cloves (minced)
3 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons lime juice
2 tablespoons vegetable oil
Instructions
1. Finely chop the tender part of the lemongrass stalks and mince the garlic.
2. In a large bowl, combine the lemongrass, garlic, soy sauce, fish sauce, brown sugar, lime juice, and vegetable oil. Mix well.
3. Place the chicken thighs in the bowl with the marinade, turning to coat each piece thoroughly. Cover and refrigerate for at least 1 hour, or overnight.
4. Preheat your grill to medium heat and lightly oil the grates.
5. Grill the chicken thighs for about 5–7 minutes per side, until cooked through and lightly charred. Internal temperature should reach 165°F.
6. Remove the chicken and let it rest for 5 minutes before serving.
Notes
Use fresh lemongrass instead of dried for the best aroma.
Marinate overnight for deeper flavor.
