Description

This Grilled Cod with Roasted Tomatoes & Creamy Dill Sauce is the perfect light and healthy seafood dinner. Packed with fresh ingredients and flavor, it’s gluten-free and ready in under 30 minutes. A go-to cod fish recipe with creamy sauce, ideal for summer meals or easy weeknight dinners.


Ingredients

4 cod fillets

2 cups cherry tomatoes

2 tablespoons olive oil

2 tablespoons fresh dill, chopped

1/2 cup Greek yogurt

1 tablespoon lemon juice

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Mix Greek yogurt, lemon juice, chopped dill, minced garlic, salt, and pepper to make the creamy dill sauce. Chill.

2. Roast cherry tomatoes at 400°F with olive oil and salt for 15 minutes until burst and caramelized.

3. Brush cod fillets with olive oil, season with salt and pepper, then grill for 3–4 minutes on each side until flaky.

4. Plate with dill sauce as a base, then top with grilled cod and roasted tomatoes. Garnish and serve.

Notes

Pat the cod dry before grilling to ensure a good sear.

Use full-fat Greek yogurt for the creamiest dill sauce.

Let the dill sauce sit for 10 minutes to deepen the flavor.
