Ingredients

2 slices ciabatta or focaccia bread

1 grilled chicken breast, thinly sliced

2 slices mozzarella cheese

2 tablespoons pesto sauce

2 slices tomato

1 tablespoon olive oil or melted butter


Instructions

1. Preheat your panini press or grill pan.

2. Slice grilled chicken breast, tomato, and prepare all other ingredients.

3. Spread pesto on the inside of both slices of bread.

4. Layer chicken, tomato slices, and mozzarella cheese on one slice of bread.

5. Top with the second slice of bread to close the sandwich.

6. Brush the outside of the sandwich with olive oil or melted butter.

7. Grill for 3 to 5 minutes until golden brown and cheese is melted.

8. Let rest for 1 minute, then slice and serve warm.
