Description

A fresh and flavorful Grilled Chicken Greek Salad with Tzatziki featuring marinated grilled chicken, crisp veggies, feta, and creamy homemade tzatziki. Perfect for a healthy Mediterranean-style lunch or dinner. Easy to prep, high in protein, low in carbs.


Ingredients

1 lb chicken breasts

3 tbsp olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1 large head romaine lettuce

1 cup cherry tomatoes, halved

1 cup cucumber, sliced

1/2 cup Kalamata olives

1/4 red onion, thinly sliced

1/3 cup feta cheese, crumbled

3/4 cup tzatziki sauce


Instructions

1. Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl or zip-top bag. Add chicken breasts and marinate for at least 30 minutes or up to 4 hours in the fridge.

2. Preheat grill or grill pan over medium-high heat. Grill chicken 5–6 minutes per side until fully cooked and slightly charred. Let rest, then slice.

3. Wash and chop romaine lettuce. Halve cherry tomatoes, slice cucumber and red onion, and prep olives.

4. For homemade tzatziki, mix Greek yogurt with grated cucumber, garlic, lemon juice, olive oil, and dill. Add salt and chill.

5. Layer romaine on a plate or bowl. Add grilled chicken, tomatoes, cucumber, olives, and red onion. Sprinkle with feta.

6. Top with tzatziki or serve it on the side. Enjoy immediately.

Notes

This salad is best served fresh, but you can prep ingredients in advance.

Let the chicken rest before slicing for juicier texture.

Use full-fat Greek yogurt for a richer, creamier tzatziki.
