Description

This Greek Tzatziki Chicken Salad is a light, protein-rich Mediterranean recipe featuring tender chicken, creamy Greek yogurt dressing, cucumbers, tomatoes, and olives. Ingredients

2 cups cooked chicken

1 cup Greek yogurt

1 cup grated cucumber

1 clove garlic, minced

2 tablespoons fresh dill, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup Kalamata olives, halved

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Grate the cucumber and sprinkle lightly with salt. Let it sit for 10 minutes, then squeeze out the excess liquid.

2. In a bowl, mix the grated cucumber, Greek yogurt, minced garlic, dill, lemon juice, and olive oil. Season with salt and pepper.

3. Chop or shred the cooked chicken. Slice tomatoes, onion, and olives.

4. Add the chicken to the tzatziki dressing and stir until well coated.

5. Mix in the cherry tomatoes, onion, and olives.

6. Adjust seasoning to taste.

7. Chill the salad in the refrigerator for at least 30 minutes before serving.

8. Serve in pita, over greens, or with crackers.

Notes

This salad gets better after chilling as the flavors meld beautifully.

You can use rotisserie chicken for a shortcut.

Add crumbled feta for an extra creamy-salty layer.
