A rich and flavorful Gordon Ramsay Chicken Tikka Masala recipe with tender marinated chicken, a creamy spiced tomato sauce, and fresh herbs. Perfect for an easy chicken dinner idea, this homemade curry dish is better than takeout and ideal for meal prep or cozy weeknights.
Ingredients
1 ½ pounds chicken thighs, boneless and skinless, cut into chunks
1 cup Greek yogurt
1 tablespoon garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric
1 teaspoon paprika
3 cloves fresh garlic, grated
1 tablespoon fresh ginger, grated
2 tablespoons lemon juice
2 tablespoons olive oil
1 medium onion, finely chopped
2 tablespoons tomato paste
1 14-ounce can crushed tomatoes
1 cup heavy cream
1 teaspoon salt (or to taste)
¼ cup fresh cilantro, chopped
Instructions
1. In a large bowl, combine Greek yogurt, garam masala, cumin, coriander, turmeric, paprika, garlic, ginger, and lemon juice. Add chicken and toss to coat. Cover and refrigerate for at least 30 minutes or overnight.
2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear chicken pieces until charred and mostly cooked through. Set aside.
3. In the same pan, add another tablespoon of olive oil if needed. Sauté onion until golden. Stir in tomato paste and cook until slightly darkened.
4. Add crushed tomatoes and simmer until thickened, about 10 minutes.
5. Stir in heavy cream and simmer for another 5 minutes. Add chicken back to the pan and cook until fully cooked and tender.
6. Adjust seasoning with salt as needed.
7. Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
Notes
This dish tastes even better the next day as the spices continue to develop.
If you like heat, add a pinch of cayenne or chopped chili during step 3.
You can substitute chicken breast, but be careful not to overcook it.
