Description

Ingredients

1 lb beef sirloin, sliced into thin strips

1 tbsp olive oil

1 tbsp unsalted butter

1 medium onion, thinly sliced

2 cloves garlic, minced

8 oz cremini mushrooms, sliced

1 tsp Dijon mustard

1 tsp smoked paprika

1 cup beef stock

3/4 cup sour cream

Salt, to taste

Black pepper, to taste

Chopped parsley, for garnish (optional)


Instructions

1. Heat olive oil in a large skillet over high heat. Season beef strips with salt and pepper, then sear them quickly on both sides until browned. Remove from the pan and set aside.

2. Lower heat to medium. In the same skillet, melt butter and add sliced onions. Cook until soft and golden. Add garlic and mushrooms, sautéing until mushrooms release moisture and brown.

3. Stir in Dijon mustard and smoked paprika. Deglaze the pan with beef stock, scraping up any browned bits. Simmer for 5–7 minutes.

4. Reduce heat and stir in sour cream until sauce is creamy. Return beef and juices to the skillet. Simmer 2–3 minutes more until warmed through.

5. Serve hot over egg noodles, rice, or mashed potatoes. Garnish with parsley if desired.

Notes

Use high-quality beef sirloin and slice it against the grain for tenderness.

Don’t boil after adding sour cream—keep heat low to prevent curdling.

Let beef rest after searing before returning to sauce for best texture.
